Hawaiian Chicken Wrap

Main Ingredients
  • 1 Tbsp olive/vegetable oil
  • 2 boneless, skinless thinly sliced chicken breasts, cut into bite-size pieces/ strips
  • salt and pepper
  • 60mls barbecue sauce.
  • 20grams julienne cut onions.
  • half-moon tomato slices (50 grams)
  • 80mls sweet chilli sauce.
  • 1/2 cup shredded cheddar/mozzarella cheese
  • 80grams freshly chopped lettuce.
  • 60grams of fresh or tinned pineapple chunks
  • 4-5 large wheat or white tortillas
Method
  1. Heat oil in a large skillet over medium-high heat. Add chicken pieces to the pan, season with salt and pepper. Cook, flipping once until chicken is cooked through and golden brown. Add your favourite barbeque sauce to the pan and toss chicken to coat.
  2. Warm tortilla in a microwave for 20 seconds.
  3. Place tortilla on a plate or board. First layer with ribboned/shredded lettuce, add onions, tomato slices and pineapple slices.
  4. Layer with a spoonful of barbecue chicken, cheese and sweet chilli sauce.
  5. Roll it up and devour!
