Heat oil in a large skillet over medium-high heat. Add chicken pieces to the pan, season with salt and pepper. Cook, flipping once until chicken is cooked through and golden brown. Add your favourite barbeque sauce to the pan and toss chicken to coat.
Warm tortilla in a microwave for 20 seconds.
Place tortilla on a plate or board. First layer with ribboned/shredded lettuce, add onions, tomato slices and pineapple slices.
Layer with a spoonful of barbecue chicken, cheese and sweet chilli sauce.
